My favourite cocktail!

Ingredients

5mls sugar syrup (see recipe below)

50mls Gin

25mls lime juice

 

Preparation

Pour the sugar syrup, lime juice, and gin into a cocktail shaker. Add some ice, shake (this is your James Bond moment) and strain into a martini glass. Garnish with a strip of lime rind if desired.

 

Sugar Syrup

Ingredients

1 cup water

1 cup water

Preparation

Fill a saucepan with equal parts of water and sugar. You can increase or decrease the amounts depending on how much syrup you need – just make sure you keep the water and sugar in equal amounts.

Heat the mixture over a medium heat and stir until the sugar is dissolved and the mixture is clear. Keep it on a simmer until the sugar dissolves and then turn the heat off as you don’t want to make caramel now (or maybe you do but not for this cocktail).

Allow the mixture to cool to room temperature, then store it in a sealed container/bottle/jar in the fridge. It will last for a while.
