Lime Buttercream

Ingredients 

115g cream cheese – room temperature

15g butter – room temperature

1 ½ cups icing sugar – sifted

1 tsp lime juice, or more depending on how thick you want the buttercream

1 tsp lime zest

 

Preparation

If using an electric mixer, combine all the ingredients and beat until fluffy and smooth.

If making by hand, cream together the cream cheese and butter until smooth.

Add the sifted icing sugar 1/2 cup at a time, beating until combined after each addition. Finally, add the lime juice and lime zest and beat again until smooth.

Use sandwiched in a cake or as a topper for cupcakes. It is lovely on a carrot cake or banana cake as you get the sweetness of the icing sugar, combined with the cream cheese and the tartness of the lime.

Note: The cream cheese and butter should be room temperature/soft so you can beat it but not melted. If the mixture is too soft, add more icing sugar, 2 tablespoons at a time until it reaches the right consistency. If it is too thick, you can add more lime juice a few drops at a time.
